Its my favorite time of year!! All of my garlic plants are trying to flower and it is my job to pluck their scapes off to ensure that the plant puts ALL of its energy into creating a large & delicious bulb to harvest soon!

Tonight I experimented making a foodscape fresh Cheesy Cauliflower, Garlic Scape, Potato au gratin dish.
IT WAS DELICIOUS AND EASY TO MAKE.
This is bound to a regular meal for us, especially as we are harvesting all the ingredients right from our yard!!

CHEESY HOMEGROWN SPRING VEGGIE AU GRATIN
INGREDIENTS:
1 HEAD CAULIFLOWER (CHOPPED IN FOOD PROCESSOR)
10 FRESH GARLIC SCAPES (CHOPPED IN FOOD PROCESSOR)
6 POTATOES (SLICED INTO 1/4” PIECES)
1/2 ONION (CHOPPED IN FOOD PROCESSOR)
2 JALAPENOS (DE-SEEDED AND CHOPPED IN FOOD PROCESSOR)
1 TBS CUMIN
CHEESE SAUCE:
1 CUP HEAVY WHIPPING CREAM
1/2 CUP AGED WHITE CHEDDAR CHEESE (MELTED)
1/2 AGED PARMESEAN CHEESE (MELTED)
1/4 CUP BUTTER (MELTED)
DIRECTIONS:
PRE-HEAT OVEN TO 400F
COMBINE CHEESE SAUCE INGREDIENTS IN A SMALL SAUCE POT AND COOK ON MEDIUM HEAT, STIRRING REGULARLY
WASH AND SLICE POTATOES; ADD TO LARGE MIX BOWL
WASH ALL OTHER INGREDIENTS AND ADD TO FOOD PROCESSOR; CHOP FOR 25 SECONDS; ADD TO LARGE MIXING BOWL
POUR CHEESE SAUCE INTO LARGE MIXING BOWL AND STIR, COATING EVERYTHING EVENLY
DUMP MIXTURE INTO A LARGE CASSEROLE DISH AND BAKE FOR 45 MINUTES, OR UNTIL THE TOP IS CRISPY
REMOVE FROM OVEN AND ALLOW TO COOL FOR 15 MINUTES BEFORE SERVING
SALT AND PEPPER TO TASTE- I ADDED TAPATIO SAUCE FOR A KICK!

NEVER GROWN GARLIC?

This is an easy, practical food crop to grow that doesn’t take up much space, or need irrigation or fertilizer! Best planted the fall through most of the US, garlic grows through the winter and is ready to harvest in early summer. It is extra practical because it helps deter animals from eating your plants through-out your garden!
You can plant garlic cloves, with the paper attached directly into the soil about 1/2” deep, or you can transplant garlic that has started to grow (leftovers from last seasons harvest!)
